Bite through the skin Chicken Thighs

I've been watching the TV show BBQ Pitmasters. In the competition BBQ events they always mention when doing chicken thighs that when the judges take a bite they should be able to bite through the skin. In other words the skin shouldn't pull off. How do I cook thighs to obtain that bite through the skin.
